Almond Crust • No Added Sugar Option • Lower-Carbohydrate Dessert
A delicate, rich no-bake cheesecake with mascarpone, vanilla, lemon, and a thin almond crust. The filling contains no flour or starch, and allulose can replace sugar to substantially reduce the amount of digestible carbohydrate.
Yield: 10–12 servings
Pan: 8-inch / 20-cm springform pan
Preparation: About 25 minutes, plus 6 hours chilling
Ingredients
Almond Crust
-
1 1/2 cups (150 g) finely ground almond flour
-
3 tablespoons (42 g) unsalted butter, melted
-
2 tablespoons granulated allulose, or sugar if preferred
-
1/4 teaspoon fine salt
-
1/2 teaspoon pure vanilla extract
Mascarpone Filling
-
16 oz (450 g) mascarpone cheese, cold
-
8 oz (225 g) full-fat cream cheese, softened slightly
-
1 cup (240 mL) cold heavy whipping cream
-
1/3–1/2 cup (65–100 g) allulose, adjusted to taste*
-
1 teaspoon pure vanilla extract
-
Finely grated zest of 1 small lemon
-
1 tablespoon fresh lemon juice
-
Small pinch of fine salt
-
1 1/2 teaspoons unflavored gelatin
-
2 tablespoons cold water
*If using regular sugar instead, start with about 1/3 cup and adjust to taste. Sweeteners differ substantially in sweetness, so substitutions are best made by taste rather than assuming a perfect 1:1 conversion.
Preparation
1. Prepare the crust. Line the bottom of the springform pan with parchment paper. Combine almond flour, melted butter, allulose or sugar, salt, and vanilla until the mixture resembles moist crumbs.
Press firmly into a thin, even layer across the bottom of the pan. A thin crust keeps the almond flavor elegant while minimizing carbohydrate per serving. Refrigerate while preparing the filling.
2. Prepare the gelatin. Sprinkle gelatin evenly over the cold water and allow it to hydrate for about 5 minutes. Gently warm it just until completely dissolved. Do not boil. Let it cool slightly while remaining liquid.
3. Make the mascarpone base. Beat the softened cream cheese briefly until smooth. Add mascarpone, allulose, vanilla, lemon zest, lemon juice, and salt. Mix at low speed only until smooth and uniform.
Avoid prolonged beating of mascarpone, which can cause the filling to become grainy or overly loose.
4. Whip the cream. In a separate chilled bowl, whip the heavy cream to soft-to-medium peaks. The cream should hold its shape while remaining smooth rather than stiff.
5. Stabilize the filling. Mix a spoonful of the mascarpone mixture into the dissolved gelatin to temper it. Gradually blend this back into the mascarpone mixture.
Fold the whipped cream gently into the mascarpone base in two or three additions. Stop as soon as no visible streaks remain.
6. Assemble. Spoon the filling over the chilled almond crust. Smooth the surface with a spatula. Cover and refrigerate for at least 6 hours, preferably overnight.
7. Serve. Run a thin knife around the edge before releasing the springform pan. For clean slices, use a sharp knife warmed in hot water and wiped dry between cuts.
Serve cold.
Optional French-Inspired Finish
Keep the topping restrained so that the mascarpone remains the focus. Good lower-carbohydrate choices include a few fresh raspberries, very thin strawberry slices, finely grated lemon zest, unsweetened cocoa powder, or a few toasted sliced almonds.
For the lowest-carbohydrate version, simply finish the cheesecake with lemon zest and a light dusting of unsweetened cocoa.
Why This Version Is Lower in Carbohydrate
Traditional cheesecake crusts often rely on cookies, crackers, flour, and substantial added sugar. Here, almond flour replaces the grain-based crust, while the filling requires neither flour nor starch.
Using allulose instead of table sugar further reduces the amount of carbohydrate expected to contribute meaningfully to blood glucose. However, this should still be considered a dessert rather than a “free food.” Almond flour and dairy ingredients contribute some naturally occurring carbohydrate, and individual glucose responses can differ.
For people monitoring blood glucose
For more predictable portions, cut the cake into 12 slices rather than serving by eye. Pairing a modest portion with a meal rather than eating a large serving by itself may also be useful for some people monitoring post-meal glucose.
When purchasing ingredients, check labels carefully. Mascarpone, cream cheese, heavy cream, almond flour, vanilla products, and especially sweetener blends can vary in carbohydrate content. Some products marketed as low-sugar sweeteners contain other carbohydrate-containing ingredients.
For someone using insulin or medication that can cause hypoglycemia, carbohydrate estimates should not be used to independently change medication doses without an individualized treatment plan.
Quality Notes
The goal is not merely to remove sugar. Mascarpone supplies richness and a naturally luxurious mouthfeel; whipped cream creates lightness; cream cheese provides enough acidity and structure to prevent the dessert from tasting excessively fatty; lemon brightens the dairy flavors; and a small amount of salt intensifies both vanilla and perceived sweetness.
This balance allows the cheesecake to remain satisfying even when its added sugar is dramatically reduced.
Optional Variation: Individual Mascarpone Cheesecakes
Divide the almond mixture among 10–12 small glasses or ramekins and top with the mascarpone filling. Chill as directed.
This version makes portion size immediately visible and eliminates the temptation to make increasingly large slices from a whole cake.
Nutrition Note
This cheesecake is designed as a lower-carbohydrate alternative to traditional cheesecake. Almond flour replaces a conventional cookie or graham-cracker crust, while mascarpone, cream cheese, and heavy cream provide richness without requiring flour or starch in the filling. Choosing allulose instead of sugar can further reduce the amount of added digestible carbohydrate.
Although the recipe is lower in carbohydrate, it is still a rich dessert. Individual blood glucose responses can vary, so portion size and personal glucose response should be considered by people who monitor their blood glucose.
Food Safety
Because this is a no-bake dessert made with mascarpone, cream cheese, and heavy cream, keep it refrigerated until serving. Refrigerate leftovers promptly in a covered container. Do not leave the cheesecake at room temperature for extended periods.

Bucăți de tahini cu susan

No-Bake • Almond & Sesame • Sugar or Allulose Option • Lower-Carbohydrate Dessert
These soft, nutty sesame bites combine tahini with almond flour for a rich dessert that requires no baking. Using allulose instead of sugar substantially reduces added digestible carbohydrate while preserving sweetness and the characteristic toasted-sesame flavor.
Yield: 16–18 small bites
Preparation: About 15 minutes, plus 30–60 minutes chilling
Ingredients
-
3/4 cup (180 g) unsweetened tahini, well stirred
-
1 cup (100 g) finely ground almond flour
-
3–4 tablespoons granulated or powdered allulose, adjusted to taste
OR 2–3 tablespoons sugar, adjusted to taste -
1 teaspoon pure vanilla extract
-
1/4 teaspoon fine salt
-
1/4 teaspoon ground cinnamon, optional
-
2–4 tablespoons unsweetened sesame seeds, for coating
-
1–2 tablespoons additional almond flour, only if needed for consistency
Preparation
1. Prepare the tahini mixture. Stir the tahini thoroughly before measuring so that its natural oils are evenly incorporated.
In a medium bowl, combine tahini, almond flour, allulose or sugar, vanilla, salt, and optional cinnamon.
2. Adjust the texture. Mix until a soft dough forms. Tahini varies considerably in consistency. If the mixture is too soft to shape, add additional almond flour about 1 tablespoon at a time.
Avoid adding too much almond flour. The finished bites should remain tender and creamy rather than dry or crumbly.
3. Chill. Refrigerate the mixture for approximately 20–30 minutes, or until firm enough to handle comfortably.
4. Shape. Divide into 16–18 small portions and gently roll each portion into a ball.
Keeping the portions relatively small makes the dessert rich and satisfying while also providing a more consistent serving size.
5. Finish with sesame. Place sesame seeds on a small plate and gently roll each bite in them until lightly coated.
For additional flavor, the sesame seeds may be lightly toasted and completely cooled before use.
6. Chill before serving. Refrigerate the finished bites for another 20–30 minutes to allow them to firm.
Serve chilled or allow them to stand for a few minutes at room temperature for a softer, creamier texture.
Optional Flavor Variations
Lemon-Sesame: Add 1 teaspoon finely grated lemon zest.
Chocolate-Tahini: Add 1 tablespoon unsweetened cocoa powder. A small amount of additional tahini may be needed if the mixture becomes too firm.
Cardamom-Sesame: Add a small pinch of ground cardamom for a Middle Eastern-inspired aroma.
Coconut-Sesame: Roll some of the bites in unsweetened finely shredded coconut instead of sesame seeds. Check the coconut label for added sugar.
Lower-Carbohydrate Option
For the lowest added-sugar version, choose unsweetened tahini, almond flour, and allulose rather than table sugar.
Avoid sweetened tahini spreads, honey, dates, maple syrup, or sweetened coatings when the goal is to minimize digestible carbohydrate. Although these ingredients can be used in desserts, they would substantially change the carbohydrate profile of this particular recipe.
Ingredient labels should still be checked because tahini, almond flour, cocoa, coconut, and sweetener blends can vary in carbohydrate content.
Nutrition Note
Tahini and almond flour provide predominantly fat along with some protein and dietary fiber. Sesame and almonds also contribute unsaturated fats. Using allulose instead of table sugar can substantially reduce the amount of added digestible carbohydrate in the recipe.
This dessert may therefore be useful as a lower-carbohydrate alternative to many conventional sweets for people who have been advised to monitor carbohydrate intake or blood glucose. However, “lower carbohydrate” does not mean carbohydrate-free, and individual blood glucose responses can vary.
Portion size remains important. Making 16–18 small bites provides more consistent portions than forming a smaller number of large balls.
Food Safety
Store the tahini bites in a covered container in the refrigerator. For best quality, keep them refrigerated until shortly before serving.
Because sesame and almonds are common food allergens, these bites should not be served to anyone with a known sesame or tree-nut allergy.

People managing diabetes or another medical condition should follow the individualized nutrition and medication guidance provided by their healthcare team. A lower-carbohydrate dessert should not be used as a reason to independently change insulin or other glucose-lowering medication.
